Oreo Pancakes

I love how the weekends give you a chance to really enjoy breakfast. My typical breakfast, Monday through Friday, consists of a Fiber One bar and some coffee. I mean, who has time to actually make breakfast when you’re rushing to leave the house at 7 am? Not this girl.

Saturdays are a different story. On Saturdays (and other days off), I get to sleep in a little and then spend a leisurely hour or so whipping up something delicious! That being said, I’m a bit guilty of neglecting this wonderful ritual of Saturday breakfast. You see, for months now, I’ve been making empty promises. Empty promises to make pancakes. Pretty much every week.

Usually on Wednesday or Thursday or so, I’ll find some recipe on Pinterest and announce that I’m going to make pancakes on Saturday!  And then I get sidetracked and the pancakes never materialize. So when I finally got around to making some pancakes, I knew they had  to be special pancakes.

Not your typical Bisquick Complete with a couple of chocolate chips thrown in here. This is kind of like eating dessert first thing in the morning, thinly disguised as ‘breakfast’.

I found the recipe (and several others I NEED to try) here! The only difference is that I used Birthday Cake Oreos. Because when given the option of birthday cake flavored/scented anything, I will rarely choose something else.

The recipe didn’t mention greasing the pan or anything so I was a little worried at first, but they cooked up beautifully! I used my non-stick ceramic skillet, courtesy of my mom. This thing is great! It heats very evenly and is super easy to clean. Good looking pancake, wouldn’t you say?

And they are freaking delicious. Really delicious. The cookies and cream glaze was such a perfect topping. Not exactly a healthy breakfast, but everything in moderation, right? Plus summer is almost over.

Oreo Pancakes (originally from Must Come Hungry)

  • 1 egg
  • 3/4 cup milk
  • 1 cup flour
  • 2 tablespoons shortening (melted)
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1/2 cup of crushed Oreos (I used the Birthday Cake variety)

Glaze

  • 3/4 cup confectoner’s sugar
  • 2 tbsp milk
  • 1/4 cup crushed Oreos
  1. Beat egg in a medium mixing bowl until fluffy.
  2. Add remaining pancake ingredients (except Oreos) and beat until well combined.
  3. Add cookies, and mix well.
  4. Pour a large spoonful of batter onto a pre-heated pan or griddle and cook a couple of minutes, until you see bubbles starting to form. Flip and cook another couple of minutes.

To make glaze:

Combine milk with confectioner’s sugar and mix until well blended. Stir in crushed Oreos.

Liberally spoon glaze over pancakes, and enjoy!

So, somehow I mixed up my jars of flour and confectioner’s sugar. I know what you’re thinking…how?!  They’re in identical mason jars and have a similar consistency. It’s not entirely out of the realm of possibility. As a result, my initial ‘glaze’ didn’t come out as planned. I kept adding more and more milk to it and realized that it was forming more of a dough than a glaze. And then I checked the jar…and decided that next time I set out to make breakfast, I should probably make coffee first.

      They were delicious! But rather than ‘have Emily make them’ I think you should instead make them for her to welcome her back from Argentina 🙂
